There are many stories and legends about coffee, how it was discovered , ,how it was born and all the various traditional ways in which people from different countries used to make it

Istanbul

Hundreds of years ago since they controlled a big part of the market regarding coffee and also the Mocha haven Turkish people used to offer “special” drinks containing faz’ abbas: a mixture of seven drugs and spices ,including pepper ,opium and saffron and other delicacies such as little balls of honey-flavored hashish and sheera, hashish or marijuana mixed with tobacco that could be then mixed with coffee creating some sort of “Islamic speed” meaning amphetamine. It was made to increase their clients’ pleasure. The drink they loved the most was made in a specific small pot called ibrick and then they used to also leave coffee grounds inside the cup.  

Brazil

Brazilian people used to make cafezinho which is their version of espresso. The drink is made by putting hot water on coffee beans through a sock-like bag. Then the liquid that comes from it is again put on coffee grounds up to ten times until you get the desired intensity. It is a pleasantly bitter drink that gets sweetened with lots of sugar.

Wien 

People from Wien created the habit of adding milk or cream to coffee , while Turkish people as well as Hindus because they believed this could cause leprosy.

Yemen

In Yemen people used to make two types of coffee: shatter and gisher. The first one , shatter is made by putting a spoon full of grounded and spiced coffee in hot water. It’s a strong coffee but it doesn’t have any remains and its flavor reflect a mixture of clove ,cardamon ,water and sugar. It’s a mild ,creative and deliciously sweet infusions except at funerals where adding sugar is forbidden. The second one , gisher is made with drupes zests, drupes being berries containing coffee beans. The drupes zests are left to infuse in hot water.
